Beware of winter before it comes:Store the mango pulp


This morning I was reading stories to my little one and I encountered the story of the grasshopper and the ant. It ended with the moral "Beware of winter before it comes", and almost immediately it reminded me of winters which will be here and my dear Mangoes will vanish, so if I want to enjoy Mangoes a few months down the line I need to work and save them for the winter. Hence I decided to take a trip to the local fruit market and get some Juicy, Pulpy and Sweet with a hint of Tang Mangoes.

Now starts the process of refrigerating the pulp for the winter to come.

1.      Get The Mangoes of the pulpy variety like Safeda and peel them
Handy Notes: Get Mangoes that have firm skin and then you can use potato peeler to peel off the skin

2.      Extract the pulp by scarping it off the seed.

3.     Put it in a thick bottomed pan with some Sugar and Salt as per your taste, and cook it on high flame till it starts bubbling  

4.      Lower the flame and cook it for 7-10 minutes so that excess water due to sugar is removed.

5.      Turn of the flame and let the mixture cool to room temperature

6.      Churn the mixture in a food processor to make a smooth paste

7.      Now store it in a clean container and shelf it in a deep freezer
Handy Notes:
·        Store it in multiple small containers so that you don’t have to remove the entire batch from freezer to use

Tribute to King of fruit:Mango

Every time I think of Mango I think of the line from the advertisement of popular mango drink " Aam to ab har mausam milta hai". How i wish that was true. I admit to being a die hard mango fan. I like mango raw, ripe , frozen, blended, churned all ways. My favorite mango is not just all sugar it has many many health and beauty benefits as well and knowing these benefits help me feel less guilty about hogging on the fruit.

Mango is a rich fruit loaded with:
  • Fiber   : Fiber helps in maintaining good digestion. It also helps in slower digestion so u don't feel hungry for quite some time after the consumption. according to experts a cup of mangoes fulfills 10% of your daily fiber need.
  • Antioxidants : There are a number of antioxidants in mangoes and these are especially helpful in fighting colon and breast cancer. 
  • Vitamin C : A cup of  Mangoes fulfills 60%- 80% of your Vitamin C needs to keep your bones, skin,gums and teeth healthy. 
  • Vitamin A : Mangoes are a very rich source of Vitamin A that is important for string immunity, production of Red blood cells , maintaining skin tissue 
  • B Vitamins especially B6 : they help in hormone production in brain and in heart disease prevention.
  • Small amounts of  Copper, Potassium and Magnesium
